Ultimate Christmas Breakfast Casserole

A hearty and festive breakfast casserole filled with sausage, eggs, and cheese, perfect for Christmas morning.

  • 1 pound breakfast sausage
  • 10 large eggs
  • 2 cups whole milk
  • 6 slices white bread, cubed
  • 2 cups shredded cheddar cheese
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 small onion, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large skillet over medium heat, brown the sausage until fully cooked and crumbly. Drain excess grease and transfer to a separate bowl.
  2. In the same skillet, add the chopped onion, green bell pepper, and red bell pepper. Sauté for about 5 minutes until softened.
  3. Lightly grease a 9×13 inch baking dish and evenly arrange the cubed bread across the bottom.
  4. Spread the cooked sausage and sautéed vegetables over the cubed bread, then add a layer of shredded cheddar cheese.
  5. In a large bowl, whisk together the eggs, whole milk, salt, and black pepper until smooth.
  6. Pour the egg mixture evenly over the casserole layers, ensuring every bread cube is moistened. Cover tightly and refrigerate overnight or for at least 2 hours.
  7. Preheat oven to 350°F. Remove the cover from the casserole dish and bake for 45 minutes until golden brown.
  8. Let the casserole rest for 10 minutes before slicing and serving.

Notes

For added flavor, serve warm with hot sauce or salsa. Leftovers can be stored in an airtight container for up to 3 days.
