Tomato Basil Soup

A simple yet delicious soup combining fresh tomatoes and aromatic basil, perfect for any meal.

Ingredients

  • 4 large ripe tomatoes, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, then sauté until the onion is translucent.
  3. Add the chopped tomatoes and vegetable broth, and bring to a boil.
  4. Reduce the heat and let it simmer for 20 minutes.
  5. Add the fresh basil leaves, season with salt and pepper, then blend the soup until smooth.
  6. Serve hot.

Notes

For a creamier texture, add a splash of heavy cream or coconut milk before blending.
