Ingredients
- 4 large ripe tomatoes, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup fresh basil leaves
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, then sauté until the onion is translucent.
- Add the chopped tomatoes and vegetable broth, and bring to a boil.
- Reduce the heat and let it simmer for 20 minutes.
- Add the fresh basil leaves, season with salt and pepper, then blend the soup until smooth.
