Tater Tot Sausage Breakfast Casserole

A hearty breakfast casserole combining crispy tater tots, savory sausage, cheese, and eggs, perfect for family gatherings or meal prep.

  • 2 lb hot breakfast sausage
  • 1 (30-32oz) bag frozen tater tots
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 11/2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 8 eggs
  • 2 cups milk

Instructions

  1. Preheat your oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
  2. In a large skillet, cook the sausage over medium heat until it’s no longer pink. Be sure to drain any excess fat.
  3. In a large bowl, combine the tater tots, cooked sausage, and both cheeses. Mix well and pour this mixture into your prepared pan.
  4. In another bowl, whisk together the eggs, salt, pepper, garlic powder, onion powder, and milk until fully blended. Pour this mixture over the tater tot and sausage blend in the pan.
  5. If you wish to bake later, cover and refrigerate at this point.
  6. Bake uncovered for 60-70 minutes or until the eggs are set and the top is golden brown.

Notes

Serve warm with ketchup or hot sauce. Pairs well with fresh fruit or a light salad.
