Tater Tot Breakfast Casserole

A delicious and filling breakfast casserole combining crispy tater tots, savory eggs, and gooey cheese, perfect for family brunches or holiday gatherings.

  • 1 bag of frozen tater tots
  • 8 large eggs
  • 1 cup milk
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 cup cooked breakfast sausage or bacon (optional)
  • Salt and pepper to taste
  • Chopped green onions (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. Spray a 9×13 inch baking dish with non-stick spray. Layer the frozen tater tots evenly on the bottom of the dish.
  4. If using, sprinkle the cooked sausage or bacon over the tater tots.
  5. Pour the egg mixture over the tater tots and meat, ensuring everything is evenly covered.
  6. Sprinkle shredded cheese on top.
  7. Bake in the preheated oven for 30-35 minutes, or until the egg is set and the top is golden brown.
  8. Let it cool for a few minutes before slicing. Serve warm and garnish with chopped green onions if desired.

Notes

Make sure to use a baking dish with the right size to allow even cooking. For extra cheesiness, feel free to add more cheese.
