Description

A vibrant and satisfying bowl combining street corn flavors with tender chicken and fresh vegetables, perfect for quick dinners or meal prep.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups corn (fresh, frozen, or canned)
  • 1 cup cooked rice or quinoa
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the shredded chicken, corn, cooked rice or quinoa, diced red bell pepper, black beans, and avocado.
  2. In a small bowl, mix the lime juice, chili powder, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss to combine.
