Description

A delicious and fun meal that combines the flavors of tacos with the heartiness of a rice bowl.


Ingredients

  • 1 cup cooked rice
  • 1 lb ground beef or chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • Fresh cilantro for garnish


Instructions

  1. In a skillet over medium heat, cook the ground beef or chicken until browned. Drain excess fat.
  2. Stir in the taco seasoning and salsa, and let simmer for 5 minutes.
  3. In bowls, layer the cooked rice, the meat mixture, black beans, corn, and cheese.
  4. Top with diced avocado, tomatoes, sour cream, and cilantro.
  5. Serve warm and enjoy!
