A delicious and fun meal that combines the flavors of tacos with the heartiness of a rice bowl.
Ingredients
- 1 cup cooked rice
- 1 lb ground beef or chicken
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup shredded cheese
- 1 avocado, diced
- 1 cup diced tomatoes
- 1/2 cup sour cream
- Fresh cilantro for garnish
Instructions
- In a skillet over medium heat, cook the ground beef or chicken until browned. Drain excess fat.
- Stir in the taco seasoning and salsa, and let simmer for 5 minutes.
- In bowls, layer the cooked rice, the meat mixture, black beans, corn, and cheese.
- Top with diced avocado, tomatoes, sour cream, and cilantro.
- Serve warm and enjoy!
