Sugar Cookie Cheesecake

A delightful twist on two beloved desserts, combining creamy cheesecake with a sweet sugar cookie crust, perfect for any occasion.

  • 1 ½ cups sugar cookie dough
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • ½ cup whipped cream
  • Sprinkles (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Press the sugar cookie dough into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream until fully incorporated.
  6. Pour the cheesecake filling over the crust in the pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. Let it cool, then refrigerate for at least 4 hours before serving.
  9. Top with whipped cream and sprinkles if desired before slicing.

Notes

Use room temperature cream cheese for easier mixing. Don’t overbake; the center should be slightly jiggly when done.
