A tasty and easy dish with a perfect blend of fresh spinach and creamy feta cheese wrapped in crispy tortillas.
Ingredients
- 2 cups fresh spinach
- 1 cup crumbled feta cheese
- 4 large tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: diced tomatoes, olives, or herbs
Instructions
- Heat olive oil in a pan over medium heat.
- Add fresh spinach and sauté until wilted.
- Remove from heat and mix in crumbled feta and any optional ingredients.
- Place the mixture on half of each tortilla and fold it over.
- Cook each quesadilla in the pan for 2-3 minutes on each side, or until golden brown and crispy.
- Slice and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or microwave.
