Description

A tasty and easy dish with a perfect blend of fresh spinach and creamy feta cheese wrapped in crispy tortillas.


Ingredients

  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 4 large tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: diced tomatoes, olives, or herbs


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add fresh spinach and sauté until wilted.
  3. Remove from heat and mix in crumbled feta and any optional ingredients.
  4. Place the mixture on half of each tortilla and fold it over.
  5. Cook each quesadilla in the pan for 2-3 minutes on each side, or until golden brown and crispy.
  6. Slice and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or microwave.
