Description

Delicious quesadillas inspired by classic smashburgers, combining juicy beef and melted cheese in a crispy tortilla.


Ingredients

  • 1 lb ground beef (80/20 recommended for best flavor)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 4 large flour tortillas (burrito-size)
  • 1 cup shredded cheddar cheese (or American cheese, about 1/4 cup per quesadilla)
  • Optional toppings: pickles, diced onions, burger sauce, ketchup, mustard


Instructions

  1. Heat your skillet or griddle over medium-high heat for 2-3 minutes.
  2. Take about 4 oz of ground beef and press it onto one half of a tortilla, leaving a half-inch border.
  3. Season with a quarter of your salt, pepper, and garlic powder mixture.
  4. Place the tortilla beef-side down in the hot skillet and press down firmly with a spatula for 10-15 seconds.
  5. Let cook undisturbed for 2-3 minutes until edges are brown and crispy.
  6. Flip the tortilla so beef side faces up and sprinkle about 1/4 cup cheese over the beef.
  7. Fold the tortilla in half to create a half-moon shape and press down gently.
  8. Cook for 1-2 minutes on each side until golden brown and cheese is melted.
  9. Remove from heat and let rest for 30 seconds before slicing into wedges.
  10. Repeat with remaining tortillas and beef.

Notes

Ensure your skillet is hot enough before adding the tortilla for a crispy crust. Let them rest before cutting to keep the cheese in place.
