Slow Cooker Lemon Herb Chicken with Fluffy Rice

A delicious and easy meal featuring tender chicken cooked slowly with lemon and herbs, served with fluffy rice.

  • 4 chicken breasts
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • 2 cups rice
  • 4 cups water
  • Fresh herbs for garnish (optional)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix the chicken broth, lemon juice, oregano, thyme, salt, and pepper.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-7 hours or until the chicken is tender.
  5. About 30 minutes before the chicken is done, cook the rice. In a pot, bring water to a boil.
  6. Add the rice to the boiling water, reduce heat, and simmer until fluffy.
  7. Once the chicken is done, shred it with two forks. Serve it with the fluffy rice.
  8. Garnish with fresh herbs if you like.

Notes

Use fresh herbs for more flavor. Don’t open the slow cooker lid during cooking to retain heat. Adjust seasoning to taste after a few hours.
