Description
A delicious and easy meal featuring tender chicken cooked slowly with lemon and herbs, served with fluffy rice.
Ingredients
- 4 chicken breasts
- 1 cup chicken broth
- 2 tablespoons lemon juice
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- Salt and pepper to taste
- 2 cups rice
- 4 cups water
- Fresh herbs for garnish (optional)
Instructions
- Place the chicken breasts in the slow cooker.
- In a bowl, mix the chicken broth, lemon juice, oregano, thyme, salt, and pepper.
- Pour the mixture over the chicken in the slow cooker.
- Cover and cook on low for 6-7 hours or until the chicken is tender.
- About 30 minutes before the chicken is done, cook the rice. In a pot, bring water to a boil.
- Add the rice to the boiling water, reduce heat, and simmer until fluffy.
- Once the chicken is done, shred it with two forks. Serve it with the fluffy rice.
- Garnish with fresh herbs if you like.
Notes
Use fresh herbs for more flavor. Don’t open the slow cooker lid during cooking to retain heat. Adjust seasoning to taste after a few hours.
