Description

A delightful and comforting meal featuring tender chicken infused with lemon and fresh herbs, served on a bed of fluffy rice.


Ingredients

  • 4 chicken breasts
  • 2 lemons (juiced and zested)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 cups rice
  • 4 cups water
  • Optional: fresh parsley for garnish


Instructions

  1. In the slow cooker, combine chicken breasts, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
  2. Pour chicken broth over the chicken.
  3. Cook on low for 6-7 hours or until chicken is cooked through and tender.
  4. In a separate pot, bring 4 cups of water to a boil. Add rice, cover, and reduce heat to a low simmer. Cook according to package instructions.
  5. Once both the chicken and rice are done, assemble the dish by plating the rice and topping it with the lemon herb chicken.
  6. Garnish with fresh parsley if desired and serve.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove with a splash of broth or water.
