Description
A delightful and comforting meal featuring tender chicken infused with lemon and fresh herbs, served on a bed of fluffy rice.
Ingredients
- 4 chicken breasts
- 2 lemons (juiced and zested)
- 3 cloves garlic (minced)
- 1 tablespoon fresh thyme (chopped)
- 1 tablespoon fresh rosemary (chopped)
- Salt and pepper to taste
- 1 cup chicken broth
- 2 cups rice
- 4 cups water
- Optional: fresh parsley for garnish
Instructions
- In the slow cooker, combine chicken breasts, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
- Pour chicken broth over the chicken.
- Cook on low for 6-7 hours or until chicken is cooked through and tender.
- In a separate pot, bring 4 cups of water to a boil. Add rice, cover, and reduce heat to a low simmer. Cook according to package instructions.
- Once both the chicken and rice are done, assemble the dish by plating the rice and topping it with the lemon herb chicken.
- Garnish with fresh parsley if desired and serve.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove with a splash of broth or water.
