Ingredients
- 4 chicken breasts
- 2 lemons (juiced)
- 1 tablespoon olive oil

- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup long-grain rice
- Fresh herbs for garnish (e.g., parsley or thyme)
Instructions
- In a slow cooker, combine chicken breasts, lemon juice, olive oil, oregano, garlic powder, salt, and pepper.
- Pour in the chicken broth and stir to combine.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, add rice to the slow cooker.
- Check the rice for doneness and adjust the moisture if needed by adding more broth or water.
