Adorable and festive Santa Claus Macarons that bring holiday cheer to your gatherings.

  • 4 grams egg white powder (optional)
  • 100 grams egg whites
  • 105 grams almond flour
  • 105 grams Domino® Powdered Sugar
  • 1 1/2 cups Domino® Powdered Sugar (187 grams)
  • 1 tablespoon meringue powder
  • 4 tablespoons water
  • 2 drops black gel food coloring
  • 1 drop yellow gel food coloring
  • 1/2 cup all-purpose flour (63 grams)
  • 1/2 cup unsalted butter (113 grams)
  • 1/4 cup Domino® Golden Sugar (50 grams)
  • 1 1/4 cup Domino® Powdered Sugar (156 grams)
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract
  • 1/2 tablespoon milk or heavy cream
  • 1/4 cup desiccated coconut (50 grams)

Instructions

  1. Macaron Shells: Mix almond flour and powdered sugar. Whip egg whites until frothy, then gradually add Domino® Golden Sugar until stiff peaks form. Fold in almond flour mixture.
  2. Royal Icing: Combine meringue powder and water, whipping until stiff peaks form for decorating.
  3. Decorate the shells: Use royal icing to pipe Santa’s face, using black for the eyes and yellow for the nose.
  4. Sugar Cookie Buttercream: Cream unsalted butter and Domino® Golden Sugar until fluffy. Gradually add powdered sugar, vanilla extract, almond extract, and milk/cream until creamy and smooth.
  5. Fill the Shells: Pipe sugar cookie buttercream on one macaron shell and top with another shell.

Notes

For the best results, age your egg whites and sift dry ingredients to remove lumps. Allow macaron shells to dry before baking for the perfect texture.
