Roasted Maple Sweet Potatoes

A delicious side dish featuring caramelized sweet potatoes glazed with maple syrup, perfect for any meal.

  • 4 medium sweet potatoes
  • 3 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then cut them into evenly sized chunks or rounds.
  3. Place the sweet potato pieces in a mixing bowl. Drizzle with olive oil and sprinkle with salt and black pepper.
  4. Toss gently to coat each piece evenly with the oil and seasonings.
  5. Spread the sweet potatoes in a single layer on the prepared baking sheet, ensuring they have space between them.
  6. Roast for about 25-30 minutes, flipping halfway through until golden and tender.
  7. Remove from oven and brush generously with maple syrup.
  8. Return to the oven and roast for an additional 5-7 minutes until the syrup caramelizes.
  9. Let the sweet potatoes rest for a few minutes before serving.

Notes

For even cooking, cut sweet potatoes into similar sizes. Store leftovers in an airtight container in the fridge.
