Quick & Easy Homemade Butter Chicken

A quick and easy recipe for homemade butter chicken with tender chicken pieces in a rich, creamy sauce.

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves (minced)
  • 1 medium onion (diced)
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread
  • Steamed rice

Instructions

  1. Marinate the chicken by mixing with salt, garlic powder, paprika, curry powder, and Greek yogurt. Let it sit for at least 30 minutes.
  2. In a large pan, heat 3 tablespoons of vegetable oil over medium-high heat and add the chicken pieces, cooking until golden brown, about 5-7 minutes. Remove the chicken and set aside.
  3. In the same pan, add 2 tablespoons of butter. Sauté minced garlic and diced onion until the onion is soft and translucent.
  4. Stir in the tomato sauce, sugar, salt, and black pepper. Let it simmer for about 10 minutes.
  5. Add the heavy cream and mix well. Return the cooked chicken to the pan along with cayenne pepper, garam masala, and curry powder. Let it simmer for another 10 minutes.
  6. Stir in the remaining tablespoon of butter for extra creaminess.
  7. Serve hot, garnished with chopped parsley if desired, with naan bread or steamed rice.

Notes

For a richer flavor, marinate the chicken overnight. If you prefer a milder dish, skip the cayenne pepper. You can substitute half of the heavy cream with coconut cream for a different flavor.
