Ingredients
- 4 cups vegetable broth
- 1 cup chopped vegetables (carrots, celery, onion)
- 1 can diced tomatoes
- 1 teaspoon dried herbs (thyme, basil, or oregano)
- Salt and pepper to taste
- 1 cup cooked pasta or rice (optional)
Instructions
- In a large pot, bring the vegetable broth to a boil.
- Add the chopped vegetables and cook for about 5-7 minutes until tender.
- Stir in the diced tomatoes and dried herbs.
- Season with salt and pepper to taste.
- If desired, add the cooked pasta or rice.
- Simmer for another 5 minutes before serving hot.
