Quick Comfort Soup

A warm and soothing soup packed with healthy vegetables, perfect for chilly days or when you’re feeling under the weather.

Ingredients

  • 4 cups vegetable broth
  • 1 cup chopped vegetables (carrots, celery, onion)
  • 1 can diced tomatoes
  • 1 teaspoon dried herbs (thyme, basil, or oregano)
  • Salt and pepper to taste
  • 1 cup cooked pasta or rice (optional)

Instructions

  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the chopped vegetables and cook for about 5-7 minutes until tender.
  3. Stir in the diced tomatoes and dried herbs.
  4. Season with salt and pepper to taste.
  5. If desired, add the cooked pasta or rice.
  6. Simmer for another 5 minutes before serving hot.

Notes

Feel free to use any vegetables you like or have on hand. You can store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months.
