Quick Christmas Stuffed Beef Tenderloin

A delightful dish combining beef, creamy goat cheese, spinach, and sun-dried tomatoes, perfect for holiday gatherings.

  • 1 beef tenderloin
  • 4 ounces of goat cheese
  • 1 cup of spinach
  • 1/2 cup of sun-dried tomatoes
  • 2 cloves of garlic, minced
  • 1 teaspoon of fresh rosemary, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix goat cheese, spinach, sun-dried tomatoes, garlic, rosemary, salt, and pepper until combined.
  3. Cut a pocket in the beef tenderloin and fill it with the cheese mixture.
  4. Season the outside of the tenderloin with salt and pepper and drizzle olive oil over it.
  5. Sear the tenderloin in a hot skillet for 3-4 minutes on each side until browned.
  6. Transfer the sautéed tenderloin to the oven and roast for 20-25 minutes until desired doneness.
  7. Allow the beef to rest for a few minutes before slicing and serve warm.

Notes

Ensure the filling is tightly packed but avoid splitting the tenderloin. Use a meat thermometer for perfect doneness.
