Quick Blueberry French Toast Casserole

An easy and delicious breakfast casserole combining creamy French toast with juicy blueberries. Perfect for brunch or a special occasion.

  • 1 loaf of bread (preferably brioche or challah)
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 cups fresh blueberries
  • Butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter.
  2. Cut the bread into cubes and place half of them in the bottom of the greased baking dish.
  3. In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon until well combined.
  4. Pour half of the egg mixture over the bread in the baking dish. Layer the blueberries on top, then add the remaining bread cubes and pour the rest of the egg mixture on top.
  5. Press down gently to ensure the bread absorbs the liquid. Let it sit for about 10-15 minutes.
  6. Bake in the preheated oven for about 30-35 minutes or until the dish is set and golden brown.
  7. Let it cool for a few minutes before serving. Optionally, serve with maple syrup or powdered sugar on top.

Notes

Use day-old bread for better absorption. Allow the casserole to rest before baking to enhance texture. Feel free to customize with nuts or chocolate chips.
