A delicious and comforting soup combining savory dumplings with flavorful broth and fresh greens.
Ingredients
- Dumplings (potstickers)
- 4 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 cups mixed greens (spinach, bok choy, etc.)
- 2 green onions, sliced
- Soy sauce to taste
- Salt and pepper to taste
Instructions
- In a large pot, bring the chicken or vegetable broth to a boil.
- Add the minced garlic and ginger, and let it simmer for a few minutes.
- Add the dumplings and cook according to package instructions, usually around 5-7 minutes.
- Stir in the mixed greens and cook until wilted.
- Season with soy sauce, salt, and pepper to taste.
- Serve hot, garnished with sliced green onions.
Notes
For a heartier soup, add some cooked chicken or tofu. You can also switch up the veggies by adding mushrooms, carrots, or corn.
