Pomegranate, Cranberry & Brie Bruschetta

A vibrant appetizer that combines the sweet and tart flavors of pomegranate and cranberries with creamy Brie cheese, perfect for holiday gatherings.

Ingredients

  • 1 baguette, sliced
  • 8 oz Brie cheese, sliced
  • 1 cup pomegranate seeds
  • 1 cup fresh cranberries, chopped
  • 1/4 cup honey
  • 1/4 cup balsamic glaze
  • Fresh mint leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the baguette slices on a baking sheet and toast in the oven for about 5-7 minutes until lightly golden.
  3. In a bowl, mix the chopped cranberries, pomegranate seeds, honey, and a pinch of salt and pepper.
  4. Remove the toasted baguette slices from the oven and layer each slice with a piece of Brie cheese.
  5. Spoon the pomegranate and cranberry mixture on top of the Brie.
  6. Drizzle with balsamic glaze and garnish with fresh mint leaves.
  7. Serve immediately.

Notes

Store components separately if leftovers. Toasted baguette slices are best eaten the same day.
