Polar Bear Cookies

Delightful creamy cookies decorated to look like polar bears, perfect for any winter celebration.

  • 1/2 cup full fat cream cheese, room temperature (113g)
  • 1 1/2 cups granulated sugar (300g)
  • 1 large egg, room temperature (56g)
  • 2 tsp vanilla extract (8g)
  • 3 cups all-purpose flour (375g)
  • 1 Tbsp cornstarch (8g)
  • 1/2 tsp baking powder (2g)
  • 1/2 tsp fine salt (3g)
  • 1 cup unsalted butter, room temperature (226g)
  • 1 Tbsp vanilla extract (12g)
  • 1/2 tsp fine salt (3g)
  • 3 1/2 cups powdered sugar (454g)
  • 1/4 cup heavy whipping cream, room temperature (60g)
  • 1 cup coarse sanding sugar
  • 30 large chocolate chips
  • Round black sprinkles
  • Round red or pink sprinkles

Instructions

  1. Make the Soft-Batch Cream Cheese Cookies: Cream together unsalted butter and cream cheese until smooth. Add granulated sugar and mix well. Beat in egg and vanilla until fluffy. In another bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually mix dry ingredients into wet ingredients until a dough forms.
  2. Chill the Dough: Wrap the dough in plastic wrap and chill it in the refrigerator for at least an hour.
  3. Bake the Cookies: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop tablespoon-sized balls of dough onto the sheet, spacing them evenly. Bake for about 10-12 minutes or until edges are golden. Cool on a wire rack.
  4. Make the Buttercream Frosting: Beat unsalted butter until creamy. Gradually add powdered sugar, mixing well. Pour in heavy cream, vanilla extract, and salt, then beat until fluffy.
  5. Decorating: Frost each cooled cookie with buttercream, then cover in coarse sanding sugar. Use chocolate chips for eyes, and round black or pink sprinkles for noses.

Notes

Tips: Ensure butter and cream cheese are at room temperature. Chill the dough before baking for thicker cookies. Don’t skimp on frosting for a cute look.
