Overnight Hashbrown Breakfast Bake

A delicious and hearty breakfast bake that combines hashbrowns, eggs, sausage, and cheese, prepared the night before for a stress-free morning.

  • 2 cups hashbrowns
  • 6 eggs
  • 1 cup cooked sausage
  • 1 cup melted cheese
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Optional toppings: chopped green onions, diced bell peppers

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together the hashbrowns, eggs, cooked sausage, melted cheese, milk, salt, and pepper.
  3. Transfer the mixture to a greased baking dish.
  4. Cover and refrigerate overnight.
  5. In the morning, remove from the fridge and bake for 45-50 minutes or until the eggs are set and the top is golden brown.
  6. Let cool for a few minutes, then serve warm with optional toppings.

Notes

Make sure the hashbrowns are thawed if using frozen ones. Use freshly cooked sausage for the best flavor. Experiment with different cheeses for unique flavors.
