Overnight Croissant Breakfast Casserole

A delicious breakfast casserole made with flaky croissants, creamy eggs, and cheese, perfect for breakfast or brunch.

  • 6 large croissants, torn into pieces
  • 8 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or gruyere)
  • 1 cup cooked and diced ham or cooked bacon (optional)
  • 1/4 cup chopped fresh chives or parsley
  • Salt and pepper to taste
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Place the torn croissant pieces into the dish, layering them evenly.
  3. In a large bowl, whisk together eggs, milk, cream, cheese, ham or bacon (if using), chives, salt, and pepper.
  4. Pour the egg mixture over the croissants, ensuring all pieces are soaked.
  5. Cover with plastic wrap and refrigerate overnight.
  6. In the morning, preheat the oven to 350°F (175°C).
  7. Remove the casserole from the refrigerator and let it sit at room temperature for about 30 minutes.
  8. Bake uncovered for 30-40 minutes, or until the top is golden and the center is set.
  9. Let it cool for a few minutes before serving. Enjoy your holiday brunch!

Notes

Use stale croissants for better texture. Experiment with different cheeses or add vegetables for extra flavor.
