Overnight Cheesy Sausage and Hashbrown Breakfast Casserole

A delicious and hearty breakfast casserole that combines creamy cheese, savory sausage, and crispy hash browns, perfect for a stress-free morning.

  • 2 cups shredded mild cheddar
  • 1 (30 oz) bag frozen shredded hash browns
  • 2 lb breakfast sausage (use hot for an extra kick)
  • 2 cups milk
  • 8 medium eggs
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat your oven to 350°F (175°C) if making the casserole on the same day.
  2. In a large frying pan, cook the breakfast sausage over medium heat until browned. Drain excess fat and set aside.
  3. In the same pan, lightly brown the hash browns. For even cooking, you may need to do this in batches.
  4. Grease a 9×13 casserole dish and transfer the browned hash browns into it. Spread the cooked sausage evenly on top, then top with shredded cheddar cheese.
  5. In a medium bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper until combined.
  6. Pour the egg mixture over the casserole.
  7. Cover the dish with aluminum foil and place in the refrigerator overnight.
  8. When ready to bake, remove the foil and bake uncovered at 350°F (175°C) for about 40 minutes, or until cheese bubbles and browns.
