Overnight Blueberry French Toast Casserole

A delicious breakfast treat prepared in advance with fresh blueberries and fluffy bread, perfect for special occasions or lazy weekends.

  • 6 cups cubed French bread
  • 1 cup fresh blueberries
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions

  1. Grease a baking dish.
  2. Layer the bread cubes and blueberries evenly in the dish.
  3. In a mixing bowl, whisk together the eggs, milk, maple syrup, vanilla, and cinnamon until well combined.
  4. Pour the egg mixture over the bread and blueberries.
  5. Cover the dish with plastic wrap and refrigerate overnight.
  6. The next morning, preheat your oven to 350°F (175°C). Bake for 45 minutes or until golden brown and set.

Notes

Serve warm, dusted with powdered sugar or topped with extra blueberries. Drizzle with syrup for added sweetness.
