Make Ahead Breakfast Casserole

A delicious breakfast casserole packed with protein, veggies, and bread, perfect for busy mornings or hosting guests.

Ingredients

  • 6 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup diced vegetables (e.g., bell peppers, onions, spinach)
  • 1 cup cooked and crumbled sausage or bacon
  • 3 cups cubed bread
  • 1 cup shredded cheese (e.g., cheddar, mozzarella)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  3. Stir in the diced vegetables, cooked sausage or bacon, and cubed bread.
  4. Pour the mixture into a greased 9×13 inch baking dish and sprinkle with cheese.
  5. Cover and refrigerate overnight or for at least 2 hours.
  6. Bake uncovered for 35-45 minutes until the egg is set and the top is golden.
  7. Let cool slightly before serving.

Notes

Use stale bread for better texture. Optional to add herbs like basil or parsley.
