Description

A warm and comforting low-calorie, high-protein soup packed with flavor and nutritious ingredients.


Ingredients

  • 4 cups low-sodium vegetable broth
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 cups fresh spinach
  • 1 cup diced tomatoes (canned or fresh)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat a bit of water over medium heat. Add the diced onion and garlic.
  2. Sauté for about 3-4 minutes until the onion becomes translucent.
  3. Add the diced tomatoes, chickpeas, cumin, paprika, salt, and pepper. Stir well for another 2 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Once boiling, reduce heat to low and simmer for 10 minutes.
  6. Add the spinach and cook for an additional 2-3 minutes until wilted.
  7. Taste and adjust seasoning if needed. Serve warm.

Notes

Garnish with fresh herbs and a squeeze of lemon juice for added flavor. Can be stored in refrigerator for up to 4 days or frozen for up to 3 months.
