Loaded Meatloaf Casserole

A comforting casserole that transforms traditional meatloaf into a hearty meal topped with gooey cheese and tangy barbecue sauce.

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup barbecue sauce
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, onion, garlic, egg, salt, and pepper. Mix until well combined.
  3. Spread half the meat mixture in the bottom of a greased baking dish.
  4. Layer half of the cheddar cheese on top of the meat mixture.
  5. Add another layer of the remaining meat mixture, then top with barbecue sauce and the remaining mozzarella cheese.
  6. Cover the dish with aluminum foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes, then garnish with chopped green onions if desired.
  9. Serve warm and enjoy!

Notes

For a spicy kick, add BBQ seasoning or hot sauce. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
