  • 1 cup orzo pasta
  • 1 onion, chopped

  • 4 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cups spinach or kale
  • 2 carrots, sliced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Add chicken breasts and cook until browned.
  3. Pour in chicken broth, add carrots, and bring to a boil.
  4. Stir in orzo pasta and let it cook until al dente.
  5. Add lemon juice, zest, and spinach.
