Irresistibly Cheesy Bacon Egg Cheese Casserole

A delightful casserole combining layers of crispy bacon, fluffy eggs, and melted cheese, perfect for breakfast, brunch, or dinner.

  • 8 slices Bacon (or turkey bacon for a leaner option)
  • 6 large Eggs (or egg substitutes)
  • 1 cup Milk (or almond/soy milk for dairy-free)
  • 2 cups Cheddar Cheese (or Monterey Jack/pepper jack)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Garlic Powder (optional)
  • 6 slices Bread (French or Texas toast; gluten-free if needed)
  • 1/4 cup Green Onions (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a skillet until crispy, drain, and chop into pieces.
  3. In a bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
  4. Spread the slices of bread in a greased baking dish, overlapping them if needed.
  5. Sprinkle the chopped bacon and 1 cup of cheddar cheese evenly over the bread.
  6. Pour the egg mixture over the layered ingredients, making sure to cover everything.
  7. Top the casserole with the remaining cheddar cheese and sprinkle green onions on top if using.
  8. Bake for about 30-35 minutes or until the eggs are set and the cheese is melted and bubbly.
  9. Allow to cool for a few minutes before slicing and serving.

Notes

For added flavor, mix in veggies or use a variety of cheeses. Allow the casserole to sit for a few minutes after baking for easier slicing.
