Description

A delicious and healthy dinner option featuring baked salmon topped with creamy spinach and mozzarella.


Ingredients

  • 2 fillets Salmon
  • Salt, to taste
  • Pepper, to taste
  • 300 g Spinach, thawed and drained
  • 1 Onion, sliced
  • 2 cloves Garlic, minced
  • 200 g Sour Cream
  • 150 g Mozzarella
  • 1 tbsp Olive Oil


Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Season the salmon fillets with salt and pepper on both sides.
  3. In a pan, heat the olive oil over medium heat. Add the sliced onion and minced garlic, and sauté until soft and translucent.
  4. Stir in the thawed and drained spinach. Cook for a few minutes until heated through, then remove from heat.
  5. In a bowl, combine the sautéed spinach mixture with the sour cream. Mix well.
  6. Place the seasoned salmon fillets in a baking dish. Spread the spinach and sour cream mix evenly on top.
  7. Tear the mozzarella into pieces and sprinkle it over the spinach mixture.
  8. Bake for about 20-25 minutes, or until the salmon is cooked through and the cheese is bubbly and golden.
  9. Let cool for a minute before serving.

Notes

Serve with roasted vegetables or a fresh salad. A squeeze of lemon adds a refreshing touch.
