A delicious and healthy dinner option featuring baked salmon topped with creamy spinach and mozzarella.
Ingredients
- 2 fillets Salmon
- Salt, to taste
- Pepper, to taste
- 300 g Spinach, thawed and drained
- 1 Onion, sliced
- 2 cloves Garlic, minced
- 200 g Sour Cream
- 150 g Mozzarella
- 1 tbsp Olive Oil
Instructions
- Preheat your oven to 200°C (400°F).
- Season the salmon fillets with salt and pepper on both sides.
- In a pan, heat the olive oil over medium heat. Add the sliced onion and minced garlic, and sauté until soft and translucent.
- Stir in the thawed and drained spinach. Cook for a few minutes until heated through, then remove from heat.
- In a bowl, combine the sautéed spinach mixture with the sour cream. Mix well.
- Place the seasoned salmon fillets in a baking dish. Spread the spinach and sour cream mix evenly on top.
- Tear the mozzarella into pieces and sprinkle it over the spinach mixture.
- Bake for about 20-25 minutes, or until the salmon is cooked through and the cheese is bubbly and golden.
- Let cool for a minute before serving.
Notes
Serve with roasted vegetables or a fresh salad. A squeeze of lemon adds a refreshing touch.
