A delicious and simple side dish that highlights the natural sweetness of carrots combined with honey, garlic, and butter.
Ingredients
- 2 pounds carrots, peeled and cut into sticks
- 2 tablespoons unsalted butter
- 2 tablespoons honey
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- Salt and freshly ground black pepper, to taste
- 1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a small saucepan over low heat, melt the butter. Add the honey, olive oil, and minced garlic, stirring until fully combined and aromatic, about 1-2 minutes.
- Arrange the carrot sticks in a single layer on a large baking sheet.
- Drizzle the honey garlic butter sauce over the carrots, ensuring they are well coated, and season with salt and black pepper to taste.
- Toss the carrots to evenly distribute the sauce.
- Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized at the edges, stirring halfway through the cooking time for even roasting.
- Once done, remove from the oven and transfer to a serving dish.
- Garnish with chopped fresh parsley if desired and serve warm.
Notes
Cut the carrots into even sticks for uniform cooking. Adjust the sweetness by modifying honey amount. Add crushed red pepper flakes for a spicy kick!
