Hobo Casserole

A comforting one-pot dish featuring layers of ground beef, potatoes, mushroom soup, and cheese for a satisfying meal.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, thinly sliced
  • 1 can cream of mushroom soup
  • 2 cups shredded cheese (e.g., cheddar)
  • 1 onion, chopped
  • Salt and pepper to taste
  • Optional: mixed vegetables (peas, corn, green beans)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown the ground beef and onion. Drain any excess fat.
  3. In a baking dish, layer half of the sliced potatoes, followed by half of the cooked beef mixture, half of the cream of mushroom soup, and half of the cheese.
  4. Repeat the layers with the remaining potatoes, beef, soup, and cheese.
  5. Season with salt and pepper.
  6. Cover with foil and bake for 1 hour.
  7. Remove foil and bake for an additional 15 minutes, or until cheese is bubbly and golden.
  8. Let cool for a few minutes before serving.

Notes

Customize by adding vegetables or using different types of cheese. Allow casserole to sit after baking for easier serving.
