A quick and tasty quesadilla packed with protein, perfect for lunch or dinner.
Ingredients
- 1 low-carb tortilla
- 1/2 cup cooked chicken, shredded
- 2 tablespoons Greek yogurt
- 2 Laughing Cow cheese wedges
- 1 tablespoon ranch seasoning
- Cooking spray or oil for frying
Instructions
- In a bowl, mix together the shredded chicken, Greek yogurt, ranch seasoning, and Laughing Cow cheese until well combined.
- Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
- Place the low-carb tortilla in the skillet.
- Spread the chicken mixture evenly over half of the tortilla.
- Fold the other half of the tortilla over to cover the filling.
- Cook for about 3-4 minutes on each side or until golden brown and the cheese is melted.
- Remove from the skillet, slice, and serve immediately.
Notes
Serve hot with fresh veggies or a simple salad. A dollop of Greek yogurt or salsa makes a great addition.
