Description

A quick and tasty quesadilla packed with protein, perfect for lunch or dinner.


Ingredients

  • 1 low-carb tortilla
  • 1/2 cup cooked chicken, shredded
  • 2 tablespoons Greek yogurt
  • 2 Laughing Cow cheese wedges
  • 1 tablespoon ranch seasoning
  • Cooking spray or oil for frying


Instructions

  1. In a bowl, mix together the shredded chicken, Greek yogurt, ranch seasoning, and Laughing Cow cheese until well combined.
  2. Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
  3. Place the low-carb tortilla in the skillet.
  4. Spread the chicken mixture evenly over half of the tortilla.
  5. Fold the other half of the tortilla over to cover the filling.
  6. Cook for about 3-4 minutes on each side or until golden brown and the cheese is melted.
  7. Remove from the skillet, slice, and serve immediately.

Notes

Serve hot with fresh veggies or a simple salad. A dollop of Greek yogurt or salsa makes a great addition.
