Description
A delicious and nutritious high-protein white chicken chili, perfect for busy weeknights or cozy weekends.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1-2 jalapeños, diced (optional)
- 4 cups chicken broth
- 1 cup Greek yogurt or sour cream
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a pot or Instant Pot, sauté the onion and garlic until soft.
- Add the shredded chicken, white beans, corn, jalapeños, chicken broth, cumin, chili powder, salt, and pepper.
- If using a stovetop, simmer for about 20 minutes. For a slow cooker, cook on low for 4-6 hours. For an Instant Pot, cook on high pressure for 10 minutes.
- Stir in the Greek yogurt or sour cream before serving.
- Garnish with fresh cilantro if desired.
Notes
Feel free to adjust the spices and add more vegetables. This chili can be stored in the fridge for up to 4 days or frozen for up to 3 months.
