A simple and filling bowl featuring roasted sweet potatoes, tasty chicken, and fluffy rice, perfect for a nutritious meal.


Ingredients

  • 2 chicken breasts
  • 2 sweet potatoes, diced
  • 1 cup rice (white or brown)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, lime juice


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, until tender.
  3. While sweet potatoes are roasting, cook the rice according to package instructions.
  4. Season the chicken breasts with salt and pepper. In a skillet, heat olive oil over medium heat and cook the chicken until golden brown and cooked through, about 6-7 minutes per side.
  5. Slice the chicken and assemble the bowl: Start with rice as the base, add roasted sweet potatoes, and top with sliced chicken.
  6. Add any optional toppings as desired and serve.

Notes

For even cooking, cut sweet potatoes into similar-size pieces. Let the chicken rest for 5 minutes before slicing.
