Ingredients
- 2 chicken breasts
- 2 sweet potatoes, diced
- 1 cup rice (white or brown)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional toppings: avocado, cilantro, lime juice
Instructions
- Preheat the oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, until tender.
- While sweet potatoes are roasting, cook the rice according to package instructions.
- Season the chicken breasts with salt and pepper. In a skillet, heat olive oil over medium heat and cook the chicken until golden brown and cooked through, about 6-7 minutes per side.
- Slice the chicken and assemble the bowl: Start with rice as the base, add roasted sweet potatoes, and top with sliced chicken.
- Add any optional toppings as desired and serve.
Notes
For even cooking, cut sweet potatoes into similar-size pieces. Let the chicken rest for 5 minutes before slicing.
