Gyoza Soup

A comforting and delicious soup combining Japanese dumplings and fresh vegetables in a savory broth.

Ingredients

  • 5 vegetable gyozas
  • 2 spring onions, thinly sliced
  • ½1 bulb pak choi, sliced into chunks
  • 20 g ginger, finely grated
  • 1 clove garlic, minced
  • ½ courgette, spiralised
  • 500 ml vegetable stock
  • 1 tbsp soy sauce
  • 1 tbsp chilli oil
  • Salt & pepper

Instructions

  1. Add the chilli oil into a medium-sized saucepan on a low heat and add half of the thinly sliced spring onion (the whiter end). Season with salt and fry for a couple of minutes.
  2. Add the garlic and ginger to the pan and fry for one minute.
  3. Add all of the remaining ingredients: the gyozas, pak choi, courgette, vegetable stock, and soy sauce.
  4. Stir to combine everything, cover the pan with a lid, and simmer for around 7 minutes.
  5. Serve with a sprinkle of remaining spring onion and some chilli flakes for an extra kick.

Notes

For a heartier version, add more vegetables or meat. Adjust spices based on your preference.
