Ingredients

  • 2 large sweet potatoes
  • 1 cup feta cheese, crumbled
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice the sweet potatoes into 1/2-inch thick rounds.
  3. In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
  4. Arrange the rounds on a baking sheet and bake for 25-30 minutes until tender and slightly browned.
  5. Remove from the oven and drizzle honey over the sweet potato rounds, then sprinkle crumbled feta on top.
  6. Return to the oven for an additional 5 minutes.
