Ingredients
- 2 large sweet potatoes
- 1 cup feta cheese, crumbled
- 1/4 cup honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and slice the sweet potatoes into 1/2-inch thick rounds.
- In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
- Arrange the rounds on a baking sheet and bake for 25-30 minutes until tender and slightly browned.
- Remove from the oven and drizzle honey over the sweet potato rounds, then sprinkle crumbled feta on top.
- Return to the oven for an additional 5 minutes.
