Gingerbread Crinkle Cookies

  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger

  • 1/4 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 tablespoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, beat the softened butter and brown sugar until fluffy.
  4. Add molasses, egg, and vanilla, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Scoop tablespoon-sized amounts of dough, roll into balls, and then roll in powdered sugar.
  8. Place on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes until the edges are set.
  10. Let cool on the pan for a few minutes before transferring to a wire rack.

Notes

For best results, ensure butter is softened and chill the dough before baking.
