Gingerbread Cinnamon Rolls

Warm and inviting Gingerbread Cinnamon Rolls, perfect for cozy breakfasts or snacks during any season, especially the holidays.

  • 5 cups bread flour or all-purpose flour
  • 2 packets Fleischmann’s RapidRise instant yeast
  • 1/4 cup brown sugar (packed)
  • 1 tsp salt
  • 1 1/4 tsp ground ginger
  • 1 cup warm milk
  • 2 large eggs (room temperature)
  • 6 tbsp butter (softened)
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar (packed)
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 stick butter (softened)
  • 2 tbsp molasses
  • 4 tbsp butter (softened)
  • 6 oz cream cheese (softened)
  • 1 1/2 tbsp molasses
  • 2 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

  1. In a large bowl, mix the flour, yeast, brown sugar, salt, and ground ginger together.
  2. Add the warm milk, eggs, softened butter, molasses, and vanilla extract.
  3. Stir everything together until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic.
  5. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 60 minutes or until it doubles in size.
  6. Once the dough has risen, roll it out into a large rectangle about 1/4 inch thick.
  7. Spread the softened butter over the dough.
  8. Mix 1/2 cup brown sugar, cinnamon, and ginger in a bowl, then sprinkle this mixture evenly over the buttered dough.
  9. Roll the dough tightly from one end to the other, creating a log.
  10. Cut the log into 12 equal pieces and place them in a greased baking dish. Cover and let them rise for another 30 minutes.
  11. In a mixing bowl, blend the softened cream cheese and butter until smooth.
  12. Add molasses, ground ginger, cinnamon, vanilla extract, and powdered sugar; mix until creamy and spreadable.
  13. Set aside until the rolls are done baking.
  14. Serve the rolls warm and drizzle with cream cheese frosting just before serving.

Notes

For gooey centers, avoid over-baking. Use warm milk (not hot) for yeast activation.
