This creamy, rich garlic potato soup is a delightful blend of flavors that offers a warm hug in a bowl, perfect for chilly days.

  • 2 tablespoons olive oil or unsalted butter
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups vegetable broth or chicken broth
  • 1 cup unsweetened almond milk or whole milk
  • 2 pounds Yukon Gold potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried dill or 1 tablespoon fresh dill
  • 1 ½ teaspoons sea salt
  • ½ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded
  • ½ teaspoon smoked paprika (optional)
  • Fresh chives or green onions, for garnish

Instructions

  1. Heat the olive oil or butter in a pot over medium heat. Add the finely diced onions and cook for about 5 minutes until they soften.
  2. Add the minced garlic and cook for another 1–2 minutes until fragrant.
  3. Stir in the flour to form a roux. Cook for 1–2 minutes, stirring constantly.
  4. Gradually add the broth while stirring to avoid lumps. Add in the diced potatoes, herbs, salt, pepper, and smoked paprika (if using). Bring the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer uncovered for 20–25 minutes until the potatoes are fork-tender.
  6. Using an immersion blender or a stand blender, partially blend the soup to leave some chunks for texture.
  7. Stir in the almond milk or whole milk and the shredded cheddar cheese until fully melted. Simmer for another 5 minutes.
  8. Adjust the seasoning to your taste. Garnish with fresh chives or extra cheese before serving. Enjoy it hot!

Notes

For added flavor, you can include bacon bits or sautéed mushrooms. Adjust seasoning to your preference.
