Garlic Chickpea Soup

A simple and delicious soup packed with protein and flavor, perfect for a cozy night in or a quick meal.

Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 4 cloves of garlic, minced
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  2. Stir in the cumin and smoked paprika, cooking for an additional minute.
  3. Add the chickpeas and vegetable broth; bring to a boil.
  4. Reduce heat and simmer for about 15-20 minutes.
  5. Use an immersion blender to puree the soup to your desired consistency.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with fresh parsley.

Notes

For a creamier texture, blend the soup longer. Adjust seasoning as per your taste.
