Farmer’s Casserole

A comforting dish combining hash browns, peppers, ham, and cheese, perfect for breakfast, brunch, or dinner.

Ingredients

  • 3 cups diced hash brown potatoes
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped green bell pepper
  • ¼ cup chopped green onions
  • 1 cup shredded Cheddar cheese
  • 1 cup cubed fully cooked ham
  • 6 oz evaporated milk
  • 5 large eggs
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the diced hash brown potatoes in an 8-inch baking dish. Add the chopped red and green bell peppers on top.
  3. Sprinkle shredded Cheddar cheese over the potatoes and peppers, then add cubed ham and chopped green onions evenly throughout.
  4. In a small bowl, whisk the eggs, evaporated milk, garlic powder, salt, and pepper until combined.
  5. Pour the egg mixture over the contents of the baking dish. Bake in the preheated oven for 55 to 60 minutes until a knife inserted in the center comes out clean.

Notes

Serve warm with a side of salad or fruit. Leftovers can be stored in an airtight container for 3-4 days.
