Easy Cinnamon Roll Casserole

A simple and delicious casserole that combines the flavors of cinnamon rolls with the convenience of a one-pan dish. Perfect for breakfast or brunch!

  • 2 17.5 oz Pillsbury Grands cinnamon roll dough (or regular 12.4oz cinnamon rolls)
  • 1/4 cup butter (melted)
  • 2 eggs
  • 1/4 cup heavy whipping cream
  • 1 tbsp flour
  • 1 tbsp cinnamon sugar
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/2 cup finely chopped pecans (optional)
  • Icing from cinnamon rolls
  • Powdered sugar or maple syrup (if desired)

Instructions

  1. Prepare baking dish and oven: Melt the butter and coat a 9×12 baking dish with it. Preheat the oven to 350ºF.
  2. Make egg coating: In a bowl, beat together the eggs, cream, flour, cinnamon sugar, nutmeg, and vanilla.
  3. Slice dough: Open the canned cinnamon rolls and slice each roll into eighths, like a pizza.
  4. Coat dough: Toss the sliced cinnamon roll pieces in the egg mixture until they are thoroughly coated.
  5. Add dough to pan: Pour the coated dough pieces into the greased baking dish and spread them out evenly. Brush or pour any remaining egg mixture on top.
  6. Add pecans: If desired, sprinkle the chopped pecans over the dough.
  7. Bake: Place the casserole dish in the center rack of the oven and bake for 18-25 minutes or until the dough is light golden brown.
  8. Add icing: After baking, let the casserole cool for 5-10 minutes. Warm up the icing in the microwave for 15 seconds, then pour it evenly over the cinnamon roll pieces.
  9. Add extras: If desired, sprinkle with powdered sugar or drizzle with maple syrup. Serve warm and enjoy!

Notes

Don’t skip the butter for moisture and flavor. Be careful not to overbake the casserole.
