Crockpot Christmas Breakfast Casserole

A warm and hearty casserole perfect for festive mornings, filled with eggs, cheese, and spices.

Ingredients

  • 12 eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup diced ham
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 cups diced potatoes (frozen hash browns or fresh)
  • 1 cup bell peppers, chopped
  • 1 onion, chopped
  • Optional: Green onions for garnish

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  2. Grease the crockpot with non-stick spray.
  3. Layer the diced potatoes, ham, bell peppers, onion, and cheese in the bottom of the crockpot.
  4. Pour the egg mixture over the top.
  5. Cook on low for 6-8 hours or high for 3-4 hours, until eggs are set.
  6. Garnish with green onions if desired and serve warm.

Notes

For extra flavor, try using different types of cheese or smoked ham. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
