Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sauté until the onion is translucent.
- Add the mixed vegetables and diced potato, stirring to combine.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for about 20 minutes or until the vegetables are tender.
