Creamy Mushroom Soup

A rich and savory creamy mushroom soup that’s perfect for comfort food, easy to make, and ready in just 30 minutes.

Ingredients

  • 1 pound mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat the olive oil and butter over medium heat.
  2. Add the chopped onion and garlic. Sauté until the onions are translucent.
  3. Stir in the sliced mushrooms and cook until they are soft and golden.
  4. Sprinkle the flour over the mushrooms and stir well to combine.
  5. Slowly pour in the vegetable broth while stirring to avoid lumps.
  6. Bring to a boil, then reduce heat and simmer for about 15 minutes.
  7. Season with salt and pepper to taste.
  8. For a creamy texture, blend part of the soup with an immersion blender or in a regular blender.
  9. Serve hot, garnished with chopped parsley.

Notes

Use a mix of different mushrooms for a deeper flavor. For a lighter version, skip the flour and blend longer.
