Ingredients
- 1 pound mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, heat the olive oil and butter over medium heat.
- Add the chopped onion and garlic. Sauté until the onions are translucent.
- Stir in the sliced mushrooms and cook until they are soft and golden.
- Sprinkle the flour over the mushrooms and stir well to combine.
- Slowly pour in the vegetable broth while stirring to avoid lumps.
- Bring to a boil, then reduce heat and simmer for about 15 minutes.
- Season with salt and pepper to taste.
- For a creamy texture, blend part of the soup with an immersion blender or in a regular blender.
- Serve hot, garnished with chopped parsley.
Notes
Use a mix of different mushrooms for a deeper flavor. For a lighter version, skip the flour and blend longer.
