Ingredients
- 4 chicken breasts
- 2 tbsp Cajun seasoning
- 1/2 cup Parmesan cheese, grated
- 1 cup heavy cream
- 1 cup rice
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 bell pepper, chopped
Instructions
- Season the chicken breasts with Cajun seasoning, salt, and pepper.
- In a skillet, heat olive oil over medium heat and cook the chicken until golden and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, sauté chopped garlic, onion, and bell pepper until tender.
- Stir in heavy cream and grated Parmesan cheese, mixing until the sauce is smooth.
- Slice the cooked chicken and return it to the skillet, mixing it with the sauce.
- Meanwhile, cook the rice according to package instructions.
- Serve the creamy Cajun chicken over the rice and enjoy!
Notes
For a lighter option, try using brown rice or cauliflower rice. Add veggies like mushrooms or spinach for extra nutrition.
