Crack Breakfast Casserole

A hearty, cheesy, and flavorful breakfast casserole perfect for family gatherings or weekend brunch.

  • 1 pound Pork Sausage (or turkey sausage)
  • 6 strips Bacon (or vegetarian sausage)
  • 8 ounces Cream Cheese, softened
  • 1 cup Sour Cream (or Greek yogurt)
  • 1 cup Whole Milk (or non-dairy milk)
  • 8 large Eggs
  • 2 cups Shredded Cheddar Cheese (or pepper jack)
  • 30 ounces Frozen Shredded Hash Browns, thawed and drained
  • 1 packet Ranch Seasoning Mix (gluten-free option)
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Bell Peppers, chopped
  • 1 cup Spinach, fresh or thawed, well-drained
  • 1 cup Mushrooms, sautéed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the pork sausage and bacon over medium heat until fully cooked. Crumble the sausage and chop the bacon into small pieces.
  3. In a big mixing bowl, combine the softened cream cheese, sour cream, and whole milk. Mix until smooth.
  4. Crack in the eggs and beat everything together until well combined.
  5. In another bowl, mix the ranch seasoning, onion powder, garlic powder, salt, and black pepper.
  6. Add the cooked sausage, bacon, shredded hash browns, bell peppers, spinach, mushrooms, and shredded cheddar cheese into the egg mixture. Stir until fully incorporated.
  7. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  8. Bake for 45 minutes, until the top is golden brown and the casserole is set.
  9. Let it cool for a few minutes before slicing and serving.

Notes

Make sure to soften the cream cheese for easier mixing and drain the hash browns to avoid sogginess.
