Crack Breakfast Casserole

A comforting breakfast casserole packed with bacon, eggs, cheese, and hash browns, perfect for brunch gatherings or a satisfying meal.

  • 1 (30 oz) bag of frozen shredded hash browns
  • 1 (8 oz) package of cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 1 pound bacon, cooked and crumbled
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly coat a 9×13-inch baking dish with cooking spray.
  3. Spread the frozen hash browns evenly in the prepared baking dish.
  4. In a large bowl, mix the softened cream cheese and sour cream until smooth.
  5. Stir in the shredded cheddar cheese, crumbled bacon, garlic powder, onion powder, salt, and black pepper, combining everything evenly.
  6. Spread the cream cheese mixture over the hash browns, ensuring even coverage.
  7. In another bowl, beat the eggs and then add the milk, whisking until well combined.
  8. Pour the egg mixture over the casserole, covering all ingredients.
  9. Use a spatula to gently press down so that the egg mixture soaks into the layers.
  10. Bake in the preheated oven for 45-55 minutes or until the top is golden brown and the center is set.
  11. Remove from the oven and let it cool for 5-10 minutes before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for 3-4 days. To reheat, warm in the oven or microwave until heated through.
